Masala Vada or Parrupu Vadai is a crispy, savory deep fried made from chana dal and spices. Popular street food of South Indian cuisine.IN Tamilnadu It is known as Paruppu Vadai. Besides chana dal, onion is the important ingredient in masala vada which plays a major role for its flavorful. Process for making chana dal vada is very simple and takes very less time. You are craving for something crispy and crunchy, then make this vada and give ur suggestions. Masala Vada Ingredients: ½ cup Chana Dal 1 Onion, finely chopped 2 Green Chilies, seeded and finely chopped ½ tablespoon Ginger, finely chopped 6 to 7 Curry Leaves, finely chopped 3 tablespoons finely chopped Coriander Leaves Salt to taste Oil, for deep fry Masala Vada Directions: Wash and soak chana dal in water for 2 hours.Take soaked dal to a colander and drain the water. Take drained dal to mix jar of a mixer grinder. Grind it to medium coarse texture. Scrape the sides and grind the mixture again. It should be okay if a few whole dal remains. Don’t add more quantity of water while grinding. Transfer it to a medium bowl. Add chopped onion, green chili, ginger, curry leaves, coriander leaves and salt. Mix all ingredients well and Mixture should not be very moist or dry.It is difficult to make vada’s if it’s not dry, then grind 1/4 cup mixture again until smooth and mix with the remaining mixture.Add 3 teaspoons of rice flour in the mixture. Apply oil to your palms and take small portions from the mixture and give it a round lemon like shape, flatten it a little by pressing it in between your palms. Place vadas on a plate. Take a Pan and Heat oil for deep frying over medium flame. When oil is medium hot, slide 2 to 3 vadas in oil from the side of the pan and deep fry them until golden brown color. Take them to a plate on paper napkin. Deep fry remaining vadas. Masala Vadas are ready to Taste. Serve them hot as snack with tea or coffee.
